Character: It is colorless transparent crystall granular . Odorless ,soluble in water. Aqueous solution is acidic.Insoluble in ethanol. Acetone and ammonium. It is hygroscopic and solidifies into a block after hygroscopic. The relative density is 1.769g/cm3. and the pH value is 4.5-6.0.
Usage: Ammonium sulphate can be used as processing aid( only used as nutrient for fermentation). It can also used as dough regulator and yeast food. In the fresh yeast production, it’s used as the nitrogen source for yeast cultivation(Dosage is not specificed) .Dosage is about 10%( about 0.25% of wheat powder) for yeast nutrient in bread.
