6.Character: It is white granular powder that crystallinzes into small white translucent crystal particles. Odorless, withe a strong alkali smell. It absorbs moisture easily in wet air. Soluble in water,aqueous solution is alkaline. Insoluble in ethanol and ether.

7.Usage: It is used as pH regulator,nutrient, processing aid and spice. When added into noodle and wonton processing properly. it could endow the product with unique flavor,color and resilience(often combined with sodium carbonate,etc.) It is also used in mineral drinks.
